Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 packet (2 1/4 tsp) instant yeast
  • 3/4 cup warm water (about 110Β°F)
  • 1 tbsp olive oil (plus extra for brushing)
  • 1 tsp sugar
  • 1 tsp salt
  • Semolina or cornmeal (for dusting, optional)
  • 1/3 cup BBQ sauce
  • 1/4 cup ranch dressing
  • 1 1/2 cups cooked chicken breast, shredded
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup thinly sliced red onion
  • Fresh cilantro or parsley (optional, for garnish)
  • Crushed red pepper flakes (optional)

Instructions

  1. In a large bowl, combine flour, instant yeast, sugar, and salt.
  2. Add warm water and olive oil. Mix until a shaggy dough forms.
  3. Knead for 5-7 minutes until smooth and elastic. If sticky, add flour 1 tbsp at a time.
  4. Cover and let dough rest for 15-20 minutes until slightly puffed.
  5. While dough rests, mix BBQ sauce and ranch dressing in a small bowl.
  6. Shred cooked chicken breast and toss with a spoonful of sauce.
  7. Slice red onion thinly.
  8. Preheat oven to 475Β°F. Place pizza stone in oven if using.
  9. Dust work surface with flour (and semolina or cornmeal if desired).
  10. Roll out dough to a 12-inch circle. Transfer to parchment paper and brush lightly with olive oil.
  11. Bake crust for 7-8 minutes until just set but not browned.
  12. Remove crust from oven. Spread BBQ ranch sauce evenly, leaving a 1/2-inch border.
  13. Scatter sauced chicken over the base.
  14. Top with mozzarella and cheddar cheese.
  15. Sprinkle red onion slices and red pepper flakes if desired.
  16. Slide pizza (on parchment) onto hot stone or baking sheet.
  17. Bake for 10-12 minutes, or until cheese is bubbly and crust is golden and crisp.
  18. Remove pizza and let cool for 2-3 minutes.
  19. Sprinkle with fresh cilantro or parsley.
  20. Slice and serve hot.

Notes

For extra flavor, toss chicken in additional sauce before topping. Pre-bake the crust to prevent sogginess. Use gluten-free flour or dairy-free cheese for dietary adaptations. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months. Reheat in oven or skillet for best texture.
