Chewy Red Velvet Cookies with Cream Cheese Chips

  • 2 ½ cups (310g) all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (110g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 tablespoons red food coloring (liquid or gel)
  • 1 ½ cups (about 255g) cream cheese chips
  • 2 tablespoons buttermilk powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a large bowl, sift together all-purpose flour, cocoa powder, baking soda, salt, and buttermilk powder (if using). Set aside.
  3. In a mixer bowl, beat softened unsalted butter with granulated sugar and packed brown sugar until light and fluffy, about 3-4 minutes on medium speed.
  4. Beat in eggs one at a time, then add vanilla extract and red food coloring. Mix just until combined.
  5. Gradually add the dry mixture to the wet, mixing on low speed or folding gently with a spatula until just combined.
  6. Gently fold in cream cheese chips with a spatula, keeping them intact.
  7. Drop rounded balls of dough onto baking sheets about 2 inches apart.
  8. Bake for 10-12 minutes, until edges are set but centers look soft.
  9. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use softened butter (not melted) for best texture. Measure flour by weight or spoon and level to avoid dry dough. Avoid overmixing to keep cookies chewy. Slightly underbake for soft centers. Cool on baking sheet before transferring to rack. Dough can be chilled to reduce spreading.
