  • 1 box fudge brownie mix (or homemade brownie recipe)
  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil (or melted butter)
  • 1/4 cup water
  • 1/2 teaspoon espresso powder (optional)
  • Pinch of salt
  • 1216 fresh strawberries, washed and dried thoroughly
  • 1 1/2 cups semi-sweet chocolate chips or chopped chocolate
  • 1 tablespoon coconut oil or unsalted butter
  • Optional: Sprinkles, crushed nuts, or white chocolate drizzle for topping
  • Wooden or bamboo skewers (6-8 inches long)
  • Parchment paper

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8-inch square pan with parchment paper, leaving overhang for easy lifting.
  2. In a large bowl, whisk together brownie mix, eggs, oil, water, espresso powder, and salt until just combined. Do not overmix.
  3. Pour batter into prepared pan and smooth the top. Bake for 22-25 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  4. Let brownies cool completely in the pan (about 1 hour), or refrigerate to speed up cooling.
  5. While brownies cool, wash and dry strawberries thoroughly. Remove stems and cut large berries in half to about 1-inch pieces. Set aside to finish drying.
  6. Lift cooled brownies from the pan using parchment. Cut into 1-inch cubes (about 16 pieces).
  7. Thread skewers with a brownie cube, a strawberry half, and another brownie cube. Repeat as desired.
  8. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second bursts, stirring each time, until smooth and glossy (about 1 minute total). Alternatively, melt in a double boiler.
  9. Line a baking sheet with parchment paper. Dip each skewer halfway into melted chocolate, letting excess drip off. Place on parchment to set.
  10. While chocolate is still soft, add toppings if desired (sprinkles, nuts, white chocolate drizzle).
  11. Chill skewers in the fridge for 15-20 minutes until chocolate is set.
  12. Arrange on a platter and serve. Store leftovers in the fridge.

Notes

For best results, use firm, ripe strawberries and don’t overbake brownies. Chill brownies before skewering if too soft. For gluten-free or dairy-free, use appropriate brownie mix and chocolate. Skewers can be made a day ahead and stored in the fridge. Get creative with toppings and fruit swaps!
