  • 34 lbs beef chuck roast
  • 2 cups beef broth (low sodium recommended)
  • 1 large onion, sliced
  • 45 garlic cloves, minced
  • 1 tsp dried thyme
  • 2 tbsp Worcestershire sauce
  • Salt and pepper, to taste
  • French rolls or baguette
  • Butter (optional, for toasting)

Instructions

  1. Generously season the beef chuck roast with salt and pepper on all sides.
  2. Place sliced onion and minced garlic at the bottom of the slow cooker.
  3. Pour in beef broth, Worcestershire sauce, and dried thyme.
  4. Place the seasoned roast on top of the onion and broth mixture.
  5. Cover and cook on low for 8-9 hours until beef is fork-tender.
  6. Remove roast and set aside; skim excess fat from cooking liquid and strain if desired.
  7. Taste and adjust seasoning of the au jus with salt and pepper.
  8. Slice the roast thinly against the grain using a sharp knife.
  9. Optionally, toast the French rolls or baguette with butter in a skillet until golden.
  10. Assemble sandwiches by piling sliced beef onto toasted rolls and serve with warm au jus for dipping.

Notes

Searing the roast before slow cooking is optional but adds depth of flavor. Toast the bread lightly to prevent sogginess. Let the roast rest 10 minutes before slicing. Use gluten-free rolls for a gluten-free version. The au jus can be refrigerated for up to 3 days or frozen for longer storage.
