  • 2 cans (about 3 cups) cannellini or Great Northern white beans, drained and rinsed (or 1 ½ cups dried beans, soaked and cooked)
  • 23 sprigs fresh rosemary
  • Zest and juice of 1 large lemon
  • 34 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 1 ½ cups (360 ml) chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes
  • Optional: fresh parsley for garnish

Instructions

  1. Prep the Ingredients (10 minutes): Rinse and pat dry chicken thighs. Dice onion and mince garlic. Zest and juice lemon. Rinse and drain canned beans or soak and cook dried beans ahead of time.
  2. Sear the Chicken (Optional, 10 minutes): Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper. Sear skin-side down until golden and crispy, about 4-5 minutes, then flip and sear other side for 2-3 minutes.
  3. Layer Ingredients in Crockpot (5 minutes): Place diced onion and minced garlic at the bottom of the crockpot. Add white beans evenly on top. Nestle seared chicken thighs skin-side up over beans. Tuck in rosemary sprigs. Pour lemon juice and zest over top, add chicken broth, season with salt, pepper, and red pepper flakes if using.
  4. Cook (6-8 hours on Low or 3-4 hours on High): Cover and cook until chicken is tender and beans have absorbed flavors. Chicken should reach 165°F (74°C).
  5. Final Touch and Serve (5 minutes): Remove rosemary sprigs. For thicker sauce, lift chicken and mash some beans into broth, then return chicken. Garnish with parsley if desired. Serve hot with crusty bread or green salad.

Notes

Searing chicken is optional but adds flavor and texture. Use fresh rosemary for best aroma; reduce amount if using dried. Add canned beans in last 1-2 hours to avoid mushiness. For crispy skin, broil chicken 2-3 minutes after cooking. Keep an eye on liquid level if cooking on high and add broth if needed.
