A simple, heartwarming slow cooker recipe featuring tender beef chuck roast, wide egg noodles, and a rich creamy gravy. Perfect for cozy nights and busy days, this dish is easy to prepare and satisfying.

Ingredients

Scale
  • 2 pounds beef chuck roast, trimmed and cut into chunks
  • 12 ounces wide egg noodles
  • 4 cups beef broth (low-sodium preferred)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper (adjust to taste)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cut the beef chuck roast into 1.5-inch chunks. Place in a mixing bowl and sprinkle with salt, pepper, and flour. Toss to coat evenly.
  2. In a skillet over medium heat, melt the butter. Add chopped onion and garlic and cook for 3-4 minutes until softened and fragrant.
  3. Place the coated beef chunks in the slow cooker. Pour the sautéed onions and garlic evenly over the beef.
  4. Add beef broth and Worcestershire sauce to the slow cooker. Stir gently to combine, ensuring the beef is mostly submerged.
  5. Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is fork-tender.
  6. About 30 minutes before serving, cook egg noodles according to package instructions until just al dente. Drain well.
  7. Stir the heavy cream into the slow cooker. Add the cooked noodles and gently fold into the creamy beef mixture.
  8. Cook uncovered on low for an additional 15-20 minutes to thicken the gravy and meld flavors.
  9. Taste and adjust salt and pepper if needed. Sprinkle chopped fresh parsley on top before serving.

Notes

If gravy is too thin, mix 1 teaspoon cornstarch with cold water and stir in, cooking a few more minutes until thickened. If too thick, add a splash of broth or cream to loosen. Sautéing aromatics adds depth but is optional. For gluten-free, substitute flour and noodles accordingly. For dairy-free, use coconut or cashew cream instead of heavy cream. Avoid lifting the slow cooker lid during cooking to maintain heat and moisture.
