A quick and easy breakfast recipe featuring ripe avocados baked with eggs and topped with flavorful everything bagel seasoning. This dish offers creamy texture and a savory punch, perfect for a fuss-free brunch or light breakfast.

  • 2 ripe avocados, halved and pitted
  • 4 large eggs, preferably room temperature
  • 2 teaspoons everything bagel seasoning
  • Salt and pepper to taste
  • 1 teaspoon olive oil
  • Optional toppings: fresh chopped chives or parsley, crumbled feta, red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the avocados in half and remove the pits. Scoop out about 1 tablespoon more avocado flesh from each half to create a larger well for the egg.
  3. Place the avocado halves on a baking sheet. If needed, slice a thin piece off the bottom of each half so they sit flat and steady.
  4. Crack one large egg into each avocado half, being gentle to keep the yolk intact.
  5. Drizzle each avocado half with olive oil.
  6. Sprinkle everything bagel seasoning evenly over the eggs and avocado.
  7. Season with flaky sea salt and freshly cracked black pepper to taste.
  8. Bake in the preheated oven for 12-15 minutes, checking at 12 minutes for set whites and soft yolks. Bake longer if firmer yolks are desired.
  9. Remove from oven and let cool for a minute or two.
  10. Top with optional fresh herbs, crumbled feta, or red pepper flakes if desired and serve immediately.

Notes

Use ripe but firm avocados to prevent collapse during baking. Room temperature eggs bake more evenly. Start checking eggs at 12 minutes to avoid overbaking. Slice a thin piece off the bottom of avocado halves if they wobble. Optional toppings and seasoning variations can customize flavor. For dairy-free, skip feta or use plant-based alternatives.
