  • 1/4 cup (25 g) unsweetened cocoa powder
  • 2 tablespoons (28 g) unsalted butter, softened
  • Chocolate sprinkles or finely chopped nuts for rolling
  • Butter for greasing hands

Instructions

  1. Grease a plate or shallow dish lightly with butter to transfer the cooked mixture. Also, grease your hands with a little butter to avoid sticking when rolling later.
  2. In a medium non-stick saucepan, combine sweetened condensed milk, unsweetened cocoa powder, and softened unsalted butter. Stir everything together until smooth before heating.
  3. Place the pan over medium-low heat and stir constantly with a wooden spoon or silicone spatula. Cook for about 10-15 minutes until the mixture thickens and pulls away from the pan’s sides.
  4. Pour the hot mixture onto the greased plate and spread it out slightly to cool down. Let it rest until warm but not hot enough to burn your fingers, about 30 minutes.
  5. Butter your hands lightly. Scoop small spoonfuls (about 1 tablespoon / 15 ml each) and roll them into smooth balls. Roll each ball in chocolate sprinkles or your preferred coating.
  6. Place the rolled brigadeiros in paper liners or on a tray and chill them in the fridge for at least 30 minutes to firm up.

Notes

Stir constantly over medium-low heat to avoid burning. If the mixture is too sticky when rolling, chill it in the fridge for 10 minutes. Use butter to grease hands for easier rolling. For dairy-free version, substitute butter with coconut oil and use plant-based condensed milk. Adding a pinch of cinnamon or espresso powder can enhance flavor.
