This creamy chocolate-dipped strawberry yogurt bark is a quick, healthy snack featuring a Greek yogurt base, fresh strawberries, crunchy pistachios, and a rich dark chocolate shell. It’s easy to make, customizable, and perfect for both kids and adults.

  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract (optional)
  • 1 cup fresh strawberries, hulled and thinly sliced
  • Pinch of sea salt
  • 3.5 ounces dark chocolate (70% cocoa or higher)
  • 1 teaspoon coconut oil
  • 1/3 cup roasted pistachios, roughly chopped
  • Optional: chia seeds or hemp hearts
  • Optional: mini marshmallows or dried coconut

Instructions

  1. Line a standard baking sheet (about 9×13 inches) with parchment paper, covering the edges.
  2. In a medium bowl, mix Greek yogurt, honey or maple syrup, and vanilla extract until smooth and creamy. Adjust sweetness to taste.
  3. Spread the yogurt mixture evenly onto the lined baking sheet, about 1/2 inch thick.
  4. Arrange sliced strawberries evenly over the yogurt and sprinkle with a pinch of sea salt.
  5. Sprinkle chopped roasted pistachios on top. Add chia seeds or hemp hearts if desired.
  6. Freeze the tray for at least 2 hours, or until the yogurt is completely firm.
  7. Break chocolate into pieces and melt with coconut oil in a microwave-safe bowl (20-second bursts, stirring between each) or use a double boiler until smooth.
  8. Remove frozen yogurt bark from the freezer, lift parchment, and break or slice into chunks (about 2-inch squares). Dip one edge of each piece into melted chocolate.
  9. Return dipped bark pieces to the parchment-lined tray and chill for another 10 minutes in the freezer until chocolate is set.
  10. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

For dairy-free, use coconut or almond yogurt and vegan chocolate. For nut-free, swap pistachios with pumpkin or sunflower seeds. Slice strawberries thin and blot dry for best texture. Use thick Greek yogurt for a creamy bark. Don’t skip the second freeze after dipping in chocolate for a crisp shell.
