  • 12 large eggs, hard-boiled and peeled
  • ⅓ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white vinegar
  • 2 tablespoons fresh dill, finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon paprika (for garnish)

Instructions

  1. Place the 12 large eggs in a single layer in a pot. Cover with cold water by about 1 inch.
  2. Bring to a rolling boil over medium-high heat, then immediately cover and remove from heat. Let the eggs sit for exactly 12 minutes.
  3. Drain the hot water and transfer eggs to a bowl of ice water. Let chill for at least 10 minutes.
  4. Gently tap each egg on the counter and peel under running water.
  5. Slice each egg in half lengthwise and carefully remove yolks into a mixing bowl. Set whites aside on a serving plate.
  6. Mash the yolks with a fork or potato masher until fine crumbs.
  7. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the yolks. Mix until smooth and creamy.
  8. Fold in the finely chopped fresh dill gently.
  9. Transfer the yolk mixture into a piping bag or zip-top bag with a small corner cut off. Pipe or spoon the mixture evenly into the egg white halves.
  10. Lightly dust the tops with paprika.
  11. Cover and refrigerate for at least 20 minutes before serving.

Notes

Use older eggs (7-10 days) for easier peeling. If filling is too thick, add a splash of milk or more mayonnaise one teaspoon at a time. Fresh dill is preferred over dried for best flavor. Chill deviled eggs for at least 20 minutes to let flavors meld and filling firm up. Variations include adding Sriracha for spice or substituting half mayonnaise with mashed avocado.
