  • 1/2 cup chopped sun-dried tomatoes (packed in oil or dry-packed)
  • 4 ounces cream cheese, softened
  • 4 cups chicken broth (homemade or low-sodium)
  • 3 garlic cloves, minced
  • 1 medium onion, finely chopped
  • 1/2 cup heavy cream (optional but recommended)
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Chop the onion, mince the garlic, and roughly chop sun-dried tomatoes. If using dry-packed sun-dried tomatoes, soak them in warm water for 10 minutes, then drain.
  2. Place the chicken breasts at the bottom of the slow cooker. Scatter the chopped onion, garlic, and sun-dried tomatoes over the chicken.
  3. Pour in the chicken broth, then sprinkle Italian seasoning, crushed red pepper flakes (if using), salt, and pepper evenly on top.
  4. Cover and cook on low for 4 to 5 hours until the chicken is tender and easy to shred. Alternatively, cook on high for 2.5 to 3 hours.
  5. Remove the chicken breasts and shred them with two forks. Return the shredded chicken to the slow cooker.
  6. Cut the softened cream cheese into cubes and stir it into the hot soup until fully melted and creamy.
  7. Pour in the heavy cream and stir well to incorporate.
  8. Let the soup cook uncovered for another 10 minutes on low to thicken slightly. Taste and adjust salt and pepper as needed.
  9. Ladle the soup into bowls, garnish with chopped fresh parsley or basil, and serve.

If the soup is too thick after adding cream cheese and cream, loosen with a splash of broth or water. Avoid shredding chicken too finely for better texture.
