  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup full-fat sour cream
  • 1/2 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons fresh chives, finely chopped
  • Salt to taste (start with 1/2 teaspoon)
  • Freshly ground black pepper to taste
  • 1 teaspoon Worcestershire sauce (optional)

Instructions

  1. Peel and thinly slice 3 medium yellow onions into about 1/8 inch thick strips.
  2. Heat 2 tablespoons unsalted butter and 1 tablespoon olive oil in a large skillet over medium heat until butter melts and sizzles gently.
  3. Add the sliced onions to the skillet and stir to coat them evenly with the butter and oil.
  4. Cook the onions slowly, stirring every 5 minutes to prevent sticking or burning, until they turn a deep golden brown, about 25-30 minutes. Adjust heat as needed.
  5. Around halfway through cooking, sprinkle 1/2 teaspoon salt over the onions to draw out moisture and enhance sweetness.
  6. Transfer the caramelized onions to a bowl and let them cool completely, about 10 minutes.
  7. In a mixing bowl, combine 1 cup sour cream, 1/2 cup mayonnaise, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1 teaspoon Worcestershire sauce (if using). Stir until smooth.
  8. Fold the cooled caramelized onions and 2 tablespoons finely chopped fresh chives into the creamy base. Taste and adjust salt and pepper as needed.
  9. Cover and refrigerate the dip for at least 1 hour to let flavors meld. Overnight chilling is recommended for best flavor.
  10. Before serving, bring the dip out about 15 minutes early to soften and enhance flavor. Serve with chips, veggies, or crackers.

Notes

Keep the heat low and cook onions slowly to avoid bitterness. Let onions cool completely before mixing to prevent watery dip. If dip is too thick after chilling, add a splash of milk or cream to soften. For dairy-free version, use coconut-based sour cream and mayo alternatives and caramelize onions in olive oil only.
