A comforting and easy-to-make mashed potatoes recipe featuring roasted garlic and butter for a rich, creamy texture perfect for any occasion.

  • 2 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 46 large garlic cloves, peeled
  • 6 tablespoons unsalted butter, softened
  • 1/2 cup whole milk, warmed
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 2 tablespoons sour cream or cream cheese

Instructions

  1. Preheat oven to 400°F (200°C). Place peeled garlic cloves on a small baking sheet or wrap in foil with a drizzle of olive oil. Roast for about 20 minutes until soft and golden. Let cool slightly before mashing.
  2. Peel and chop Yukon Gold potatoes into roughly 1.5-inch chunks. Place in a large pot and cover with cold water by about an inch. Add a pinch of salt and bring to a boil over medium-high heat.
  3. Boil potatoes until tender when pierced with a fork, about 15-20 minutes. Drain thoroughly and return to the pot off the heat to dry for a minute or two.
  4. Mash potatoes using a potato masher or ricer until smooth but fluffy. Add softened butter and mix gently. Stir in warm milk a little at a time until desired creaminess is reached.
  5. Mash roasted garlic cloves into a smooth paste and fold into the potatoes. Season with salt and freshly ground black pepper to taste. Fold in sour cream or cream cheese if using.

Notes

Avoid over-mashing to prevent gluey texture. Roast garlic to mellow flavor. Warm milk before adding to potatoes to avoid clumping. Can be made dairy-free by substituting butter and milk with plant-based alternatives.
