  • 6 slices thick cut bacon
  • 8 oz cream cheese, softened
  • 1 packet (or 2 tablespoons) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 2 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • Black pepper, to taste
  • Optional: pinch of red pepper flakes
  • Optional: 2 tablespoons water or chicken broth (to loosen sauce)

Instructions

  1. Cook the bacon: Place bacon slices in a cold skillet, then turn heat to medium. Cook until crispy, about 5-7 minutes, flipping occasionally. Transfer to a paper towel-lined plate and crumble once cool.
  2. Prepare the chicken: Season both sides of chicken breasts with garlic powder and black pepper. In the same skillet, remove excess bacon grease, leaving about 1 tablespoon for flavor. Add chicken and cook for 5-7 minutes per side until golden and cooked through (internal temperature should reach 165°F / 74°C). Remove chicken and set aside.
  3. Make the creamy sauce: Lower heat to medium-low. In a mixing bowl, combine softened cream cheese and ranch seasoning. Add a splash of water or chicken broth (about 2 tablespoons) to loosen the mixture. Stir until smooth and creamy.
  4. Combine and simmer: Pour the cream cheese mixture into the skillet. Stir gently for 2-3 minutes until it starts to melt and thicken. Add shredded cheddar cheese and stir until melted and smooth.
  5. Finish the dish: Return chicken breasts to the skillet, spooning sauce over them. Sprinkle crumbled bacon and green onions on top. Cover and simmer for 3-5 minutes to meld flavors and warm through.
  6. Serve: Remove from heat and let rest for a couple of minutes before serving.

Notes

Soften cream cheese before mixing to avoid clumps. Cook bacon slowly on medium heat for best crispiness. Use a meat thermometer to avoid overcooking chicken. Add extra broth if sauce becomes too thick. Can be adapted for dairy-free or slow cooker methods.
