  • ½ cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 1 cup chicken broth (240 ml), low sodium recommended
  • ¾ cup heavy cream (180 ml)
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, thyme)
  • ¼ teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels. Pound each breast to an even thickness of about ½ inch (1.3 cm). Season both sides with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken breasts and cook without moving for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside.
  3. Lower heat to medium. Add minced garlic to the skillet and stir for about 30 seconds until fragrant.
  4. Add chopped sun-dried tomatoes and Italian seasoning. Stir for 1 minute to release flavors.
  5. Pour in chicken broth, scraping the bottom of the pan to lift browned bits. Let simmer for 2-3 minutes to reduce slightly.
  6. Stir in heavy cream and Parmesan cheese. Continue stirring until cheese melts and sauce thickens, about 3-4 minutes. Adjust seasoning with salt, pepper, and red pepper flakes if using.
  7. Return chicken breasts to the skillet, spoon sauce over them, and simmer gently for 2-3 minutes to soak up flavors.
  8. Sprinkle fresh chopped basil over the dish before serving. Serve hot with your favorite sides.

Notes

Pound chicken breasts evenly for juicy texture. Avoid crowding the pan when searing. Cook sauce on medium heat to prevent cream from curdling. Scrape browned bits from pan for extra flavor. If sauce is too thin, simmer longer off the chicken; if too thick, add broth or cream.
