  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 1 tablespoon red food coloring (or natural beet powder as substitute)
  • 4 ounces cream cheese, softened (115g)
  • 2 tablespoons powdered sugar
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. In a large bowl, whisk together rolled oats, cocoa powder, granulated sugar, baking powder, and salt until evenly combined.
  3. In a separate bowl, whisk milk, egg, vanilla extract, melted butter, and red food coloring until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Batter should be thick but pourable; add a splash more milk if too thick.
  5. In a small bowl, beat together softened cream cheese and powdered sugar until smooth and creamy.
  6. Spread the oat batter evenly in the prepared baking dish. Dollop spoonfuls of the cream cheese mixture on top.
  7. Using a butter knife or skewer, gently swirl the cream cheese into the batter to create a marbled effect without overmixing.
