  • 4 tablespoons unsalted butter, softened
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • ½ teaspoon lemon zest (optional)
  • Pinch of salt and pepper to taste

Instructions

  1. Pat the steak dry with paper towels to remove excess moisture.
  2. Cut the steak into roughly 1-inch cubes, keeping sizes consistent for even cooking.
  3. Toss the steak pieces in olive oil, kosher salt, black pepper, and garlic powder if using.
  4. Let the steak sit at room temperature for about 10 minutes.
  5. While the steak rests, combine softened butter, minced garlic, parsley, thyme, lemon zest, salt, and pepper in a small bowl and mix until smooth. Set aside at room temperature.
  6. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  7. Place the steak cubes in a single layer in the air fryer basket without overcrowding. Cook in batches if needed.
  8. Air fry the steak bites for 7-9 minutes, shaking the basket or flipping the bites halfway through cooking.
  9. Remove the steak bites and immediately toss them with the garlic herb butter while hot.
  10. Serve promptly, optionally with an extra drizzle of garlic herb butter.
