A quick and easy recipe for perfectly crispy and juicy smash burgers cooked on a Blackstone flat top griddle, topped with melty American cheese and classic toppings.

  • 1 pound ground beef (80/20 blend)
  • 4 slices American cheese
  • 1 teaspoon salt, freshly ground
  • 1/2 teaspoon black pepper, freshly ground
  • 4 soft hamburger buns (brioche or potato buns recommended)
  • 2 tablespoons butter, softened
  • Optional toppings: sliced pickles, shredded lettuce, tomato slices, ketchup, mustard

Instructions

  1. Preheat your Blackstone flat top griddle to medium-high heat (around 375°F). Let it heat up for about 5 minutes until evenly hot.
  2. In a mixing bowl, gently season the ground beef with salt and pepper. Divide the meat into 4 equal balls (about 4 ounces each).
  3. Spread softened butter on the cut sides of the buns. Place them butter-side down on the flat top and toast for 1-2 minutes until golden and crisp. Remove and set aside.
  4. Place one beef ball on the hot griddle. Using a metal spatula, press down firmly and evenly to flatten the patty to about 1/4-inch thickness. Hold pressure for 10 seconds to create a crispy crust. Repeat with remaining balls, spacing them out.
  5. Let the patties cook undisturbed for 2-3 minutes until edges turn brown and crispy. Flip carefully with the spatula.
  6. Immediately place a slice of American cheese on each patty after flipping. Cook for another 1-2 minutes until cheese melts and burger is cooked through.
  7. Place the cheesy patties on the toasted buns. Add your favorite toppings like pickles, lettuce, tomato, ketchup, or mustard.
  8. Serve immediately while hot for the best crispy and juicy combination.

Notes

Use freshly ground 80/20 beef for best juiciness and crust. Keep the griddle hot and spatula dry to prevent sticking. Press patties once firmly and avoid overworking the meat. Toast buns with butter for extra flavor. For gluten-free, use gluten-free buns or lettuce wraps. Cheese can be swapped for cheddar or pepper jack.
