A quick and easy stir-fry featuring crispy garlic-infused beef paired with tender broccoli, delivering bold and comforting flavors perfect for busy weeknights.

  • 1 lb (450 g) flank steak or sirloin, thinly sliced against the grain
  • 1 large head broccoli, cut into bite-sized florets
  • 4 cloves garlic, minced
  • ⅓ cup (80 ml) low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons cornstarch
  • 3 tablespoons vegetable oil (canola or sunflower)
  • 1 teaspoon brown sugar
  • 1 teaspoon fresh ginger, grated (optional)
  • 2 green onions, sliced
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Slice 1 lb (450 g) flank steak thinly against the grain, about ¼ inch (6 mm) thick. Toss the slices in 2 tablespoons of cornstarch until lightly coated. Let it sit for about 10 minutes.
  2. Cut 1 large head of broccoli into bite-sized florets. Rinse and pat dry. Optionally blanch in boiling water for 1 minute, then plunge into ice water. Drain well.
  3. In a small bowl, whisk together ⅓ cup (80 ml) low-sodium soy sauce, 2 tablespoons oyster sauce, 1 teaspoon brown sugar, and 1 teaspoon grated fresh ginger (optional). Set aside.
  4. Heat 2 tablespoons vegetable oil in a wok or large skillet over medium-high heat until shimmering. Add beef slices in a single layer (cook in batches if needed). Cook 2-3 minutes per side until golden and crispy. Remove and set aside.
  5. Add remaining 1 tablespoon oil to the pan. Toss in minced garlic and cook for 15 seconds until fragrant, avoiding burning.
  6. Add broccoli florets and stir-fry for 3-4 minutes until tender-crisp.
  7. Return beef to the pan. Pour in the sauce mixture and toss for 1-2 minutes until sauce thickens and coats beef and broccoli evenly.
  8. Drizzle 1 teaspoon sesame oil over the stir-fry. Toss in sliced green onions and red pepper flakes if using. Give a final toss and remove from heat.
  9. Serve immediately, best over steamed rice or noodles.

Notes

Coat beef with cornstarch for a crispy texture. Cook beef in batches to avoid overcrowding and steaming. Keep garlic cooking time short to prevent burning. Blanch broccoli optionally to keep vibrant color and crunch. For gluten-free, substitute soy sauce with tamari and cornstarch with arrowroot powder. For dairy-free/paleo, skip oyster sauce or use coconut aminos alternative.
