Instructions

  1. Activate the Yeast (10 minutes): In your mixing bowl, combine warm water (about 110°F/43°C), sugar, and yeast. Stir gently, then let it sit until it becomes foamy and bubbly on top.
  2. Make the Batter (5 minutes): Add flour, salt, and olive oil to the yeast mixture. Mix with a wooden spoon or whisk until smooth. The batter will be sticky and more like a thick pancake batter than dough.
  3. Let it Rise (45-60 minutes): Cover the bowl with a clean kitchen towel. Set it in a warm, draft-free spot and let the dough puff up until nearly doubled in size and full of bubbles.
  4. Heat Oil (5-10 minutes): Pour oil into your frying pan or pot, filling it about 2-3 inches deep. Heat to 350°F (175°C). If you don’t have a thermometer, test with a small drop of batter; it should sizzle and rise immediately.
