  • 2/3 cup granulated sugar

  • 1 cup fresh or frozen raspberries
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 425°F (220°C). Place the rack in the middle position. Grease four 6-ounce ramekins generously with butter and dust lightly with cocoa powder to prevent sticking.
  2. Melt the chocolate and butter together using a double boiler or microwave in 15-second intervals, stirring until smooth and glossy. Let the mixture cool slightly.
  3. In a separate bowl, whisk the eggs and granulated sugar vigorously until pale and thick, about 3-4 minutes by hand or 2 minutes with an electric mixer.
  4. Gently fold the cooled chocolate mixture into the eggs and sugar. Add vanilla extract and a pinch of salt.
  5. Sift the flour over the batter and fold it in lightly but thoroughly, avoiding overmixing.
  6. Divide the batter evenly into the prepared ramekins, filling about three-quarters full.
  7. Bake for 12-14 minutes until edges are set but the center is still soft and wobbly. Check closely after 10 minutes.
  8. While the cakes bake, prepare the raspberry coulis by combining raspberries, powdered sugar, and lemon juice in a small saucepan over medium heat. Stir gently until berries break down and mixture thickens, about 5 minutes. Strain through a fine mesh sieve to remove seeds if desired.
  9. Remove cakes from the oven and let cool in ramekins for 1-2 minutes. Run a knife around edges to loosen and invert onto serving plates.
  10. Serve immediately with a generous drizzle of raspberry coulis. Optionally dust with powdered sugar or garnish with fresh raspberries.
