A quick and easy recipe for authentic Greek gyros with juicy marinated meat, fresh tzatziki sauce, and warm pita bread. Perfect for weeknight dinners or gatherings.

  • 1 lb boneless pork shoulder or chicken thighs, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 cup Greek yogurt, full-fat
  • 1/2 cucumber, finely grated and drained
  • 2 cloves garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh lemon juice
  • Salt to taste
  • 4 pita breads or flatbreads
  • 1 small red onion, thinly sliced
  • 1 large tomato, sliced
  • Lettuce leaves (optional)
  • Feta cheese crumbles (optional)

Instructions

  1. Marinate the meat: In a large bowl, combine thinly sliced pork or chicken with garlic, olive oil, lemon juice, oregano, cumin, smoked paprika, salt, and pepper. Toss to coat well. Cover and refrigerate for at least 1 hour, preferably overnight.
  2. Prepare the tzatziki sauce: Grate cucumber finely and squeeze out excess moisture. Mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt in a bowl. Stir until smooth and chill until ready to serve.
  3. Cook the meat: Heat a skillet over medium-high heat. Add marinated meat in a single layer and cook for 3-4 minutes without disturbing until browned. Flip and cook another 3-4 minutes until cooked through and juicy.
  4. Warm the pita bread: Warm pita breads in a dry skillet or oven at 350Β°F for 2-3 minutes until soft and pliable.
  5. Assemble the gyros: Spread tzatziki on warm pita, add cooked meat, then top with sliced red onion, tomato, lettuce, and feta if desired. Fold or roll up and serve.

Notes

Marinate meat overnight for best flavor. Pat meat dry before cooking if too wet. Remove excess water from grated cucumber to prevent watery tzatziki. Do not overcrowd pan when cooking meat. Warm pita just before serving to prevent sogginess. For dairy-free tzatziki, use coconut yogurt and substitute herbs.
