  • Pinch of salt

Instructions

  1. Cube about 8 cups of thick-cut brioche or challah bread into 1-inch pieces. Spread on a baking sheet and let dry out for a few hours or overnight.
  2. In a large bowl, whisk together 8 large eggs, 2 cups whole milk, 2 teaspoons vanilla extract, 1 teaspoon cinnamon, and ½ cup granulated sugar until smooth and pale.
  3. Gently fold the cubed bread into the custard, ensuring every cube is coated. Let sit for 10-15 minutes to absorb the liquid.
  4. Pour the soaked bread mixture into a greased 9×13-inch baking dish, spreading evenly and pressing down lightly.
  5. In a small bowl, mix ½ cup chopped toasted pecans, ½ cup packed brown sugar, 2 tablespoons melted butter, 1 teaspoon cinnamon, and a pinch of salt until crumbly but sticky.
  6. Sprinkle the praline mixture evenly over the bread. Cover tightly with plastic wrap and refrigerate overnight or at least 6 hours.
