  • 1 bunch asparagus (about 1 pound / 450 grams), trimmed
  • 4 tablespoons unsalted butter (about 55 grams)
  • 2 tablespoons fresh lemon juice (from 1 large lemon)
  • 2 tablespoons capers, drained
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the tough ends off the asparagus. Toss asparagus in a mixing bowl with 2 tablespoons olive oil, salt, and pepper. Spread evenly on one side of a baking sheet.
  3. Pat dry the salmon fillets with paper towels. Drizzle with olive oil and season generously with salt and freshly ground black pepper. Place skin-side down on the other side of the baking sheet without overcrowding.
  4. Roast in the oven for 12-15 minutes until salmon is opaque and flakes easily, and asparagus is tender but crisp. Check after 12 minutes to avoid overcooking.
  5. While roasting, melt butter in a small saucepan over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in capers and lemon juice. Simmer gently for 2 minutes, stirring occasionally. Remove from heat.
  6. Plate the salmon and asparagus. Spoon the warm lemon butter caper sauce over the salmon. Garnish with chopped fresh parsley if desired.

Notes

Pat salmon dry before seasoning to ensure crispy skin. Avoid overcrowding the pan to prevent steaming. Use a meat thermometer to check for 145°F internal temperature. Toss asparagus halfway through cooking for even browning if desired. For dairy-free, substitute butter with olive oil or vegan butter.
