  • About 8 small flour or corn tortillas, warmed

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Thinly slice chicken breasts into strips about 1/2 inch thick. Slice bell peppers and yellow onion into similar-sized strips.
  3. In a large bowl, combine olive oil, chili powder, paprika, cumin, garlic powder, kosher salt, and black pepper. Stir well to make a seasoning blend.
  4. Add chicken strips, bell peppers, and onions to the bowl. Toss thoroughly to coat evenly with the seasoning and oil.
  5. Spread the chicken and veggies in a single layer on a rimmed baking sheet. Avoid overcrowding.
  6. Roast in the preheated oven for 20-25 minutes, stirring or flipping halfway through (around 12 minutes), until chicken reaches an internal temperature of 165°F (74°C) and peppers are tender but vibrant.
  7. Remove from oven and squeeze fresh lime juice over the chicken and peppers. Sprinkle chopped cilantro if desired.
