A quick and easy recipe for lobster tails baked with a rich garlic herb butter, perfect for special occasions or a comforting weeknight meal.

  • 4 medium-sized lobster tails (68 oz / 170225 g each), thawed if frozen
  • 1/2 cup (115 g) unsalted butter, preferably European-style
  • 4 cloves fresh garlic, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves
  • Zest of 1 medium lemon
  • 1 tablespoon fresh lemon juice (optional)
  • 1/4 teaspoon smoked paprika (optional)
  • Salt to taste, preferably flaky sea salt
  • Freshly ground black pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil.
  2. Using kitchen scissors, cut down the top of the lobster shell lengthwise, stopping before the tail fin. Pry the shell open and lift the lobster meat to rest on top of the shell (piggyback method).
  3. In a small saucepan over medium-low heat, melt the butter. Add minced garlic and cook gently for 2-3 minutes until fragrant but not browned.
  4. Stir in chopped parsley, thyme leaves, lemon zest, smoked paprika (if using), and lemon juice. Remove from heat and season with salt and pepper.
  5. Brush each lobster tail generously with the warm herb butter using a pastry brush. Reserve some butter for basting.
  6. Lightly brush the lobster shells with olive oil.
  7. Place lobster tails on the prepared baking sheet and bake for 12-15 minutes, basting once halfway through with reserved herb butter. The meat should be opaque and firm but tender.
  8. Once out of the oven, spoon more warm herb butter over the lobster tails before serving.

Notes

Keep the heat low when melting garlic in butter to avoid burning and bitterness. Use the piggyback method to cook lobster evenly and allow the butter to coat the meat thoroughly. Check doneness early to avoid rubbery texture. Rest lobster tails for a couple of minutes after baking to redistribute juices.
