  • 1 large head romaine lettuce, washed and chopped
  • 1 cup croutons (about 30 g), store-bought or homemade
  • 1/4 cup freshly grated Parmesan cheese (about 20 g)
  • 1/3 cup mayonnaise (about 80 ml)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon anchovy paste (optional)
  • 1 small clove grated garlic or 1/4 teaspoon garlic powder
  • 1 teaspoon Dijon mustard
  • Freshly ground black pepper to taste
  • 4 large flour tortillas (about 10-inch / 25 cm diameter)

Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, garlic powder, smoked paprika, salt, and pepper. Rub evenly over chicken breasts and let rest for 10 minutes.
  2. Grill the chicken: Heat grill pan or outdoor grill to medium-high. Grill chicken 4-5 minutes per side until internal temperature reaches 165°F (74°C). Let rest for 5 minutes.
  3. Prepare the Caesar dressing: Whisk together mayonnaise, lemon juice, Worcestershire sauce, anchovy paste (if using), garlic, Dijon mustard, and black pepper. Adjust seasoning to taste.
  4. Assemble the salad: Toss chopped romaine with enough Caesar dressing to coat evenly. Add croutons and Parmesan cheese, toss gently.
  5. Build the wraps: Lay a tortilla flat, place a generous handful of salad in the center, top with sliced grilled chicken. Fold sides and roll tightly. Repeat with remaining tortillas.

Notes

For lighter dressing, substitute mayonnaise with Greek yogurt. Use gluten-free or corn tortillas for gluten-free wraps. Add fresh cucumber or red onion slices for extra crunch. Keep dressing separate if packing ahead to avoid soggy wraps.
