Flavorful Layered Fiesta Dip with Guacamole and Chorizo

A quick and easy layered dip combining spicy chorizo, creamy guacamole, seasoned beans, and melty cheese, perfect for parties and casual gatherings.

  • 8 ounces pork chorizo, casing removed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 ripe avocados, peeled and pitted
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1 small tomato, finely diced (optional)
  • Salt and pepper, to taste
  • 1 can (15 oz) refried beans
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream or Mexican crema
  • 1/2 cup diced tomatoes or fresh salsa
  • 1/4 cup sliced black olives
  • 2 green onions, thinly sliced
  • 1 jalapeño, finely chopped (optional)

Instructions

  1. Heat skillet over medium heat. Sauté chopped onion for 2-3 minutes until translucent.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add chorizo, breaking it up with a spatula. Cook for 6-8 minutes until browned and cooked through. Drain excess fat and set aside to cool slightly.
  4. In a medium bowl, mash avocados with lime juice, salt, and pepper. Stir in chopped cilantro and diced tomato if using. Set aside.
  5. Mix refried beans with cumin and chili powder in a small bowl. Add a tablespoon of water or broth if beans are too thick.
  6. In serving dish, spread seasoned refried beans evenly as bottom layer.
  7. Spoon and smooth guacamole on top of beans.
  8. Add a generous layer of cooked chorizo over guacamole.
  9. Sprinkle shredded cheddar cheese evenly over chorizo.
  10. Dollop sour cream or crema over cheese layer.
  11. Scatter diced tomatoes or salsa, sliced black olives, green onions, and jalapeño pieces on top.
  12. Cover and chill in fridge for at least 30 minutes before serving.
  13. Serve with sturdy tortilla chips or fresh veggie sticks.

Notes

Use a good quality spicy pork chorizo like La Costeña for authentic flavor. Fresh lime juice in guacamole keeps it vibrant. Chill dip at least 30 minutes for best flavor melding. For dairy-free, substitute sour cream with coconut yogurt. For vegetarian, replace chorizo with sautéed mushrooms or tempeh. Avoid layering too early to prevent sogginess.
