A simple and comforting side dish featuring roasted carrots glazed with maple syrup and fresh thyme, perfect for any occasion.

  • 1 pound (450 g) carrots, peeled and cut into sticks or rounds
  • 2 tablespoons pure maple syrup
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons fresh thyme leaves, roughly chopped
  • 1 clove garlic, minced (optional)
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut 1 pound (450 g) of carrots into sticks about 3-4 inches long and ½-inch thick.
  3. In a medium bowl, combine 2 tablespoons maple syrup, 1 tablespoon olive oil, 1 minced garlic clove (optional), 2 teaspoons fresh thyme leaves, ½ teaspoon salt, and ¼ teaspoon freshly ground black pepper.
  4. Add the carrot pieces to the bowl and toss gently but thoroughly until each piece is coated in the maple-thyme mixture.
  5. Spread the carrots out in a single layer on a rimmed baking sheet lined with parchment paper or a silicone mat, avoiding overcrowding.
  6. Place in the oven and roast for 25-30 minutes, turning once halfway through with a spatula or tongs, until edges are golden brown and glaze is sticky and shiny.
  7. Check for doneness; carrots should be tender when pierced with a fork but still hold a slight bite. Roast a few minutes longer if softer carrots are preferred.
  8. Once out of the oven, toss the carrots gently to redistribute any glaze pooled on the pan. Taste and adjust salt or pepper if needed.
  9. Serve warm.

Notes

Use fresh thyme for best flavor; dried thyme can be substituted but use half the amount. Avoid overcrowding the baking sheet to prevent steaming. For a vegan butter variation, swap olive oil with vegan butter. Leftovers store well in the refrigerator for up to 3 days and reheat best in the oven at 350°F for about 10 minutes.
