A quick and easy Thai basil chicken stir-fry served over fragrant jasmine rice, featuring a balanced sauce of fish sauce, soy, and a touch of sweetness with fresh Thai basil for a restaurant-quality meal at home.

  • 1 pound boneless, skinless chicken thighs, thinly sliced
  • 1 cup fresh Thai basil leaves, packed
  • 3 cloves garlic, minced
  • 12 bird’s eye chilies or red chilies, sliced thinly (optional)
  • 1/2 medium yellow or white onion, thinly sliced
  • 2 tablespoons vegetable oil (or peanut or canola oil)
  • 2 tablespoons fish sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon oyster sauce (optional but recommended)
  • 1 teaspoon brown sugar
  • 1 1/2 cups uncooked jasmine rice
  • 2 1/2 cups water or chicken broth

Instructions

  1. Rinse 1 1/2 cups jasmine rice under cold water until water runs clear. Add rice and 2 1/2 cups water or chicken broth to a rice cooker or medium pot. Bring to a boil, then cover and simmer on low heat for 15 minutes. Turn off heat and let steam for another 10 minutes.
  2. Thinly slice chicken thighs against the grain. Mince garlic, slice onion thinly, and slice bird’s eye chilies. Pick Thai basil leaves off stems and set aside.
  3. In a small bowl, combine fish sauce, soy sauce, oyster sauce, and brown sugar. Stir until sugar dissolves.
  4. Heat wok or large skillet over high heat and add vegetable oil. Heat until shimmering but not smoking.
  5. Add sliced chicken in a single layer. Let sear without moving for 1-2 minutes, then stir-fry for 2-3 minutes until nearly cooked through.
  6. Add garlic, onion, and chilies. Stir continuously for 1-2 minutes until fragrant and onions soften slightly.
  7. Pour sauce mixture into pan. Stir quickly to coat chicken and aromatics evenly. Cook for another 1-2 minutes until sauce thickens slightly.
  8. Turn off heat and immediately add fresh Thai basil leaves. Toss gently to wilt basil without overcooking.
  9. Serve stir-fry over steamed jasmine rice immediately.

Notes

Do not overcrowd the pan to ensure proper searing. Add Thai basil off the heat to preserve its aroma and color. Use chicken thighs for juicier meat; breasts can be used but watch cooking time. For gluten-free, use tamari and gluten-free oyster sauce. For vegetarian, substitute chicken with tofu and omit fish sauce or use vegan alternatives.
