A quick and easy chocolate soufflé with a fluffy texture and a gooey molten center, perfect for special occasions or a cozy treat at home.

  • 6 oz dark chocolate (70% cocoa or higher), chopped
  • 4 tbsp unsalted butter, softened
  • 1/2 cup granulated sugar, divided
  • 4 large eggs, separated, room temperature
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tbsp all-purpose flour
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C) and butter your ramekins generously. Dust them with sugar to prevent sticking and add a little crunch on the edges. Set them on a baking sheet.
  2. Melt the chocolate and butter in a heatproof bowl over simmering water (double boiler). Stir gently until smooth and glossy. Remove from heat and let cool slightly (about 5 minutes).
  3. Whisk egg yolks with 1/4 cup (50 g) granulated sugar and vanilla extract until pale and thick (about 3 minutes). Slowly fold this into the melted chocolate mixture until fully combined.
  4. In a clean, dry bowl, beat egg whites with a pinch of salt on medium speed until soft peaks form. Gradually add the remaining 1/4 cup (50 g) sugar and continue whipping until stiff, glossy peaks form.
  5. Gently fold one-third of the egg whites into the chocolate mixture to lighten it. Then fold in the rest carefully, maintaining as much air as possible.
  6. Spoon the batter into the prepared ramekins, filling about 3/4 full. Run your thumb around the inside edge of each ramekin to help the soufflé rise evenly.
  7. Place the ramekins on the baking sheet and bake for 12-15 minutes until tops puff up and look set but centers remain soft and molten.
  8. Serve immediately, dusted with powdered sugar if desired.

Notes

Do not open the oven door while baking to prevent the soufflé from collapsing. Use room temperature eggs for better volume. Serve immediately for best molten center effect. For dairy-free, substitute butter with coconut oil and use dairy-free chocolate. For gluten-free, use gluten-free flour blend.
