These Fresh Galentine’s Rosé Strawberry Mocktails with Mint & Lemon are a refreshing, fruity, and bubbly non-alcoholic party drink perfect for brunches, celebrations, or any occasion. Made with real strawberries, mint, lemon, and sparkling non-alcoholic rosé, they’re easy to make, beautiful to serve, and loved by all ages.

  • 1 cup fresh strawberries, hulled and sliced (about 150g)
  • 2 tablespoons granulated sugar or honey (25g), or to taste
  • 2 tablespoons fresh lemon juice (30ml), about half a large lemon
  • 1012 fresh mint leaves, plus extra for garnish
  • Zest from 1 lemon (optional)
  • 2 cups chilled non-alcoholic rosé (480ml), preferably sparkling
  • 1 cup club soda or sparkling water (240ml)
  • Ice cubes, as needed
  • Fresh strawberry slices, lemon wheels, and mint sprigs for garnish

Instructions

  1. Wash, hull, and slice the strawberries. Place them in a blender or food processor with sugar (or honey) and lemon juice. Blend until completely smooth, about 30-45 seconds.
  2. Pour the blended mixture through a fine mesh strainer into a bowl or large measuring jug, pressing to extract the juice. Discard seeds and pulp or save for another use.
  3. In a large pitcher, add mint leaves and optional lemon zest. Gently muddle with a wooden spoon or muddler to release oils, being careful not to over-muddle.
  4. Add the strained strawberry-lemon mixture to the pitcher with the mint. Stir well to combine. Taste and adjust sweetness or lemon juice if needed.
  5. Pour in the chilled non-alcoholic rosé and club soda. Stir gently to mix, preserving the bubbles.
  6. Fill 4-6 glasses with ice. Add a few strawberry slices and a lemon wheel to each glass if desired.
  7. Divide the mocktail mixture evenly among the glasses. Top with extra club soda for more fizz if desired.
  8. Garnish each glass with a mint sprig, a strawberry slice, and a twist of lemon peel. Serve immediately.

Notes

Chill all ingredients before making for best results. Don’t over-muddle the mint to avoid bitterness. The strawberry-mint-lemon base can be made up to 8 hours ahead and refrigerated; add rosé and club soda just before serving. For a sugar-free version, use your favorite natural sweetener. Leftovers can be frozen into popsicles. Garnish generously for a festive look.
