Fresh Grilled Corn on the Cob with Zesty Cilantro Lime Butter

A quick and easy summer BBQ side dish featuring grilled corn on the cob slathered with a bright and tangy cilantro lime butter that enhances the natural sweetness of the corn.

  • 4 ears fresh corn on the cob, husks and silk removed
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon lime zest, finely grated
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon salt, or to taste
  • Pinch of freshly ground black pepper

Instructions

  1. Preheat your grill to medium-high heat (about 375°F). If using charcoal, wait until coals are covered with white ash.
  2. In a small mixing bowl, combine softened butter, chopped cilantro, lime juice, lime zest, garlic powder, salt, and black pepper. Mix well until evenly blended and set aside.
  3. Remove husks and silk from each ear of corn. Pat dry with a paper towel to remove excess moisture.
  4. Place the corn directly on the grill grates. Turn every 2-3 minutes for even cooking and charring, about 10-12 minutes total, until kernels are tender with golden brown spots.
  5. Remove corn from grill and immediately brush or spread the cilantro lime butter all over each ear, allowing it to melt into the kernels.
  6. Serve the corn warm for the best flavor and texture.

Notes

If you don’t have a grill, you can use a grill pan or roast the corn in a 425°F oven for 20 minutes, turning halfway. For dairy-free, substitute vegan butter or mashed avocado. Dry the corn well before grilling to get a good char. Butter should be softened but not melted for best mixing. Prepare butter ahead and refrigerate if desired, bringing to room temperature before use.
