  • 1 pint cherry tomatoes (fresh and firm)
  • 8 ounces fresh mozzarella balls (bocconcini or ciliegine)
  • About 20 fresh basil leaves
  • Sweet balsamic glaze:
  • 1/2 cup balsamic vinegar (good-quality aged)
  • 2 tablespoons honey or maple syrup
  • Optional: a pinch of salt

Instructions

  1. Make the balsamic glaze: Pour 1/2 cup balsamic vinegar and 2 tablespoons honey or maple syrup into a small saucepan. Add a pinch of salt if using. Bring to a gentle boil over medium heat, then reduce to low and simmer, stirring occasionally, for about 10-12 minutes until reduced by half and thick enough to coat the back of a spoon. Remove from heat and let cool.
  2. Prepare ingredients: Rinse cherry tomatoes and basil leaves under cold water. Pat dry gently with a clean towel. Drain mozzarella balls and pat dry with paper towels.
  3. Assemble skewers: Thread a cherry tomato, followed by a fresh basil leaf (folded if large), then a mozzarella ball onto each skewer. Repeat until all ingredients are used, aiming for 3-4 pieces per skewer.
  4. Arrange skewers on a serving platter and drizzle the cooled balsamic glaze generously over the top.
  5. Optionally, sprinkle cracked black pepper or flaky sea salt for extra seasoning. Serve immediately or chill for up to an hour before serving.

Notes

Dry ingredients well to avoid watering down the glaze. Watch the glaze carefully to prevent burning. Assemble skewers gently to avoid bursting tomatoes or bruising basil. Make glaze in advance and store in fridge for up to a week. Serve chilled or at room temperature. Variations include vegan cheese or tofu for dairy-free options, adding prosciutto or pesto for flavor boost, or lightly grilling skewers for smoky notes.
