  • 1 medium cucumber (about 8 oz / 225 g), peeled and grated
  • 2 garlic cloves, minced
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • Freshly ground black pepper, to taste
  • Optional: splash of red wine vinegar
  • Optional: pinch of smoked paprika

Instructions

  1. Peel and grate one medium cucumber (about 8 oz / 225 g) using a box grater.
  2. Place the grated cucumber in a fine mesh sieve or cheesecloth and sprinkle with 1/4 teaspoon salt. Let it sit for 10 minutes to draw out excess water.
  3. Press down firmly on the grated cucumber to squeeze out as much liquid as possible.
  4. In a medium mixing bowl, combine 1 cup (240 ml) of full-fat Greek yogurt with 2 minced garlic cloves. Stir until smooth and creamy.
  5. Stir in 2 tablespoons chopped fresh dill and 1 tablespoon fresh lemon juice.
  6. Fold in the drained cucumber, making sure it’s evenly distributed through the yogurt mixture.
  7. Add 1 tablespoon extra virgin olive oil, 1/2 teaspoon salt, and freshly ground black pepper to taste. Mix gently but thoroughly.
  8. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving.

Notes

Salting and draining the cucumber is essential to avoid watery sauce. Use full-fat Greek yogurt for best creamy texture. Letting the sauce chill for at least 30 minutes improves flavor melding. Optional ingredients like red wine vinegar or smoked paprika can add a twist.
