  • 1 tablespoon fresh rosemary, chopped
  • 2 tablespoons fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil

  • 1 bunch asparagus (about 1 lb / 450 g), trimmed
  • 1 cup snap peas (100 g), ends trimmed
  • 810 baby carrots, peeled if needed
  • 6 radishes, halved
  • Optional: pinch of red pepper flakes

Instructions

  1. In a medium bowl, whisk together lemon juice, lemon zest, minced garlic, chopped thyme, rosemary, parsley, olive oil, salt, pepper, and optional red pepper flakes.
  2. Place chicken breasts in the marinade, turning to coat thoroughly. Cover and refrigerate for at least 15 minutes, ideally up to 30 minutes.
  3. While chicken marinates, trim asparagus ends, snap peas, and radishes. Peel baby carrots if needed.
  4. Toss vegetables lightly with 1 tablespoon olive oil and a pinch of salt and pepper. Place in a grill basket if available, or prepare to grill directly.
  5. Preheat grill to medium-high heat (about 375°F / 190°C). Clean and oil grates to prevent sticking.
  6. Grill chicken breasts for 4-5 minutes per side until internal temperature reaches 165°F (74°C) and grill marks appear.
  7. Grill vegetables for 6-8 minutes, turning occasionally until tender-crisp and lightly charred.
  8. Remove chicken from grill and let rest for 3-5 minutes to redistribute juices.
  9. Serve chicken breasts alongside grilled spring vegetables. Garnish with fresh herb sprigs or extra lemon if desired.

Keep chicken breasts even in thickness by gently pounding for uniform cooking. Marinate for 15-30 minutes to tenderize and infuse flavor. Use a meat thermometer to ensure chicken reaches 165°F. Let chicken rest after grilling to retain juiciness. Use grill basket or skewers for smaller vegetables to prevent loss through grates. If no grill available, use grill pan or cast iron skillet for chicken and roast vegetables in oven at 425°F for 15-20 minutes.
