  • 1 teaspoon kosher or sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 large cloves fresh garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice (optional)
  • 1/4 teaspoon red chili flakes (optional)
  • Flaky sea salt, to taste
  • Extra parsley or chives, for garnish

Instructions

  1. Pat steak cubes dry with paper towels for best sear.
  2. Toss steak cubes with salt, black pepper, and olive oil in a mixing bowl until well coated.
  3. Heat a large skillet or cast iron pan over medium-high heat for about 2 minutes until hot.
  4. Add steak cubes in a single layer (cook in batches if needed). Sear for 2 minutes undisturbed, then flip and cook another 1-2 minutes until browned and medium-rare (internal temp about 130°F).
  5. Transfer cooked steak bites to a plate and tent loosely with foil to rest.
  6. Melt butter in a small saucepan over medium-low heat. Add minced garlic and cook gently for 1-2 minutes until fragrant but not browned.
  7. Stir in chopped parsley, lemon juice (if using), and red chili flakes. Remove from heat.
  8. Return all steak bites to the pan, pour garlic butter over, and toss gently to coat. Let sit for 1 minute on low heat.
  9. Transfer to a serving platter, sprinkle with flaky sea salt and extra herbs for garnish.

Notes

Patting the steak dry is crucial for a good sear. Cook in batches to avoid overcrowding and steaming. Use fresh garlic for best flavor. Rest steak bites before tossing with butter to keep them juicy. For dairy-free, use plant-based butter. Can prep steak and garlic butter ahead of time.
