These Gooey Lucky Charms Marshmallow Bars are a quick, no-bake treat packed with gooey marshmallows and colorful cereal—perfect for St. Patrick’s Day parties, classroom celebrations, or a nostalgic snack any time of year.

  • 6 cups Lucky Charms cereal (about 180g)
  • 5 cups mini marshmallows (about 250g), divided
  • 6 tablespoons unsalted butter (about 85g)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon fine sea salt (optional, skip if using salted butter)
  • 1/2 cup white chocolate chips (optional)
  • Sprinkles (optional)
  • Green food coloring (optional)

Instructions

  1. Line a 9×13-inch baking pan with parchment paper or generously grease with nonstick spray.
  2. In a large saucepan over medium heat, melt the butter. Stir occasionally until just melted.
  3. Add 4 cups of mini marshmallows to the melted butter. Stir constantly until melted and smooth.
  4. Remove from heat. Stir in vanilla extract and salt (if using).
  5. Immediately pour the melted marshmallow mixture over the Lucky Charms cereal in a large bowl. Toss gently and quickly to coat.
  6. Fold in the remaining 1 cup mini marshmallows and white chocolate chips or sprinkles, if using.
  7. Scrape the mixture into the prepared pan. Lightly spray your hands or a spoon with nonstick spray and gently press the mixture flat without compacting it too much.
  8. Sprinkle extra cereal marshmallows or rainbow sprinkles on top, pressing them in lightly.
  9. Let the bars cool at room temperature for 20–30 minutes, or refrigerate for 10 minutes until set.
  10. Lift the bars out of the pan using the parchment paper. Cut into squares or rectangles with a sharp knife (run under hot water for clean cuts).

Notes

For extra gooey bars, add more unmelted mini marshmallows at the end. Use nonstick spray on hands and utensils to prevent sticking. Don’t overheat the marshmallows—melt just until smooth. For gluten-free bars, use certified gluten-free Lucky Charms and marshmallows. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months.
