  • 1 tablespoon olive oil
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 1/2 teaspoons brown sugar
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray, as needed
  • Optional: Chopped fresh herbs (parsley or cilantro)
  • Optional: Dipping sauce (BBQ, ranch, honey mustard, or Greek yogurt dip)

Instructions

  1. Trim any silver skin or excess fat from the pork tenderloin and cut into 1-inch bite-sized cubes.
  2. In a medium mixing bowl, combine smoked paprika, garlic powder, onion powder, brown sugar, cayenne pepper (if using), salt, and black pepper. Stir to mix well.
  3. Add the cubed pork to the bowl. Drizzle with olive oil and toss until the pork is evenly coated with oil and spices.
  4. Preheat the air fryer to 400°F for 3-5 minutes.
  5. Spray the air fryer basket lightly with cooking spray. Arrange pork bites in a single layer, cooking in batches if necessary.
  6. Air fry at 400°F for 8 minutes. Pause, shake the basket or flip the pieces, and cook for another 5-7 minutes, until golden and the internal temperature reaches 145°F.
  7. Remove pork bites and let rest for 2-3 minutes before serving.
  8. Sprinkle with fresh herbs and serve with your favorite dipping sauce.

Pat pork dry before seasoning for best crispiness. Don’t overcrowd the air fryer basket—cook in batches if needed. Let pork bites rest after cooking to keep them juicy.
