  • 2 1/2 cups all-purpose flour (315g)
  • 2 1/4 tsp instant yeast (7g, or one packet)
  • 1 tsp sugar (4g)
  • 1 tsp salt (6g)
  • 1 cup warm water (240ml, about 110°F/43°C)
  • 2 tbsp olive oil (30ml), plus more for brushing
  • 1 cup pizza sauce (250ml), homemade or store-bought
  • 1 1/2 cups shredded mozzarella cheese (170g), or a mix of mozzarella and provolone
  • 1/4 cup grated parmesan (25g, optional)
  • Pepperoni slices or turkey pepperoni
  • Sliced bell peppers (red, yellow, green)
  • Sliced black olives
  • Fresh basil leaves
  • Sliced mushrooms
  • Red onion, thinly sliced
  • Crushed red pepper flakes
  • Mini mozzarella balls (“ciliegine”)
  • Cooked sausage, bacon, or grilled chicken
  • Italian seasoning or dried oregano (for sprinkling, optional)
  • Flaky sea salt (optional)

Instructions

  1. In a large bowl, combine flour, instant yeast, sugar, and salt. Stir to mix.
  2. Add warm water and olive oil. Mix until a shaggy dough forms (about 2 minutes). If the dough is too sticky, add more flour, 1 tbsp at a time.
  3. Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot until doubled (about 1 hour). (Or use store-bought dough and skip to step 3.)
  4. Preheat oven to 450°F (230°C). Line two baking sheets with parchment. Punch down the dough and divide into 4-6 equal pieces (for larger hearts) or 8-10 (for smaller hearts).
  5. Roll each piece into a ball. On a floured surface, roll out to about 1/4-inch thickness. Use a heart-shaped cutter or shape by hand. Place on prepared sheets.
  6. Spread a thin layer of pizza sauce (about 2 tbsp per heart) over each crust, leaving a small border. Sprinkle with mozzarella and parmesan if using.
  7. Add your favorite toppings. Brush exposed crust edges with olive oil and sprinkle with Italian seasoning.
  8. Bake for 10-13 minutes, until the crust is golden and the cheese is bubbling and slightly browned. Rotate pans halfway if using two sheets.
  9. Remove from oven and let cool for 2-3 minutes. Scatter fresh basil over the top, slice if desired, and serve warm.

Notes

Don’t overload with toppings to avoid soggy centers. Let dough come to room temperature before shaping. Par-bake crusts for 5 minutes if making ahead. For gluten-free or vegan, use appropriate dough and cheese substitutes. Set up a pizza bar for parties so everyone can customize their own.
