  • 5 large egg yolks, room temperature
  • 1/2 cup (100 g) granulated sugar, plus extra for brûlée topping
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Pour the heavy cream into a saucepan. Split the vanilla bean lengthwise and scrape the seeds into the cream, then add the pod. Heat over medium heat until just simmering (about 5 minutes). Remove from heat and let sit for 15 minutes.
  3. In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until pale and thick (about 2 minutes).
  4. Slowly pour the warm cream into the egg yolk mixture while whisking constantly. Strain the mixture through a fine mesh sieve to remove the vanilla pod and any cooked bits.
  5. Place ramekins in a large baking dish. Pour the custard mixture evenly into each ramekin, leaving a little space at the top.
  6. Pour hot water into the baking dish around the ramekins until it reaches halfway up their sides to create a water bath.
  7. Bake for 40-45 minutes until the custard is set but still slightly wobbly in the center.
  8. Remove ramekins from the water bath and let cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight.
  9. When ready to serve, sprinkle about 1 teaspoon of granulated sugar evenly over each custard. Use a kitchen torch to caramelize the sugar until golden and crisp. Alternatively, use the oven broiler for 2-3 minutes, watching closely.
  10. Let the sugar harden for a minute or two, then serve immediately.
