  • 1 cup (200 grams) packed brown sugar
  • ½ cup (120 ml) honey (raw or wildflower recommended)
  • 1 cup (240 ml) drained crushed pineapple
  • 1 cup (240 ml) pineapple chunks (fresh or canned)
  • 2 tablespoons (30 ml) Dijon mustard
  • 1 tablespoon (15 ml) apple cider vinegar
  • ½ teaspoon (1 gram) ground cinnamon (optional)
  • ¼ teaspoon (0.5 grams) ground or whole cloves
  • Freshly ground black pepper, to taste

Instructions

  1. Remove any packaging and excess skin from the ham. Score the surface in a diamond pattern about 1/8 inch deep if desired. Place the ham in the crockpot, flat side down.
  2. In a mixing bowl, whisk together brown sugar, honey, drained crushed pineapple, pineapple chunks, Dijon mustard, apple cider vinegar, ground cinnamon, cloves, and black pepper until thick but pourable.
  3. Pour half the glaze over the ham, coating it evenly. Reserve the other half for basting later.
  4. Cover the crockpot and cook on low for 4-5 hours until the ham is tender and the glaze caramelizes gently.
  5. About halfway through cooking, baste the ham with the reserved glaze to boost flavor and moisture.
  6. Check that the ham is hot and sticky with a caramelized finish. For a thicker glaze, remove the ham and simmer the glaze in a pan for a few minutes to reduce it.
  7. Let the ham rest for 10 minutes before slicing to keep juices locked in. Spoon extra glaze and pineapple chunks over the top when serving.

Notes

Use bone-in ham for juicier results; boneless works but may require adjusted cooking time. Avoid hams with thick plastic coatings. Cook on low heat to prevent glaze burning. Baste halfway through cooking for best flavor. If glaze thickens too much, add a splash of water. Let ham rest before slicing to retain moisture.
