Instructions

  1. In a large bowl, cream 1 cup softened unsalted butter with 1 cup granulated sugar until light and fluffy (2-3 minutes with a hand mixer). Add 2 large eggs, one at a time, beating well after each. Stir in 2 teaspoons vanilla extract.
  2. In a separate bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, and 1/2 teaspoon salt. Gradually add dry ingredients to wet, mixing just until combined. For pink velvet crinkles, add 1/4 cup cocoa powder and a few drops of food coloring here.
  3. Wrap dough in plastic wrap and chill for at least 30 minutes (or 10 minutes in the freezer if short on time).
  4. Preheat oven to 350°F (175°C). Line baking sheets with parchment or silicone mats.
  5. For cut-outs: Roll dough 1/4 inch thick on a lightly floured surface. Cut with heart-shaped cutters or other shapes. For drop cookies: Scoop tablespoon-sized balls and roll in powdered sugar for crinkle cookies. Arrange cookies 2 inches apart on baking sheets.

  9. For White Chocolate Martini: In a shaker with ice, combine 2 oz white chocolate liqueur and 2 oz vodka. Shake well, strain into a chilled glass. Top with whipped cream and pink sprinkles if desired.
  10. For Non-Alcoholic Pink Lemonade Fizz: Mix 4 oz pink lemonade with 4 oz sparkling water. Add fresh raspberries for color.
