Refreshing Watermelon Mint Frosé with Fresh Lime

A quick and easy summer drink combining sweet watermelon, fresh mint, zesty lime, and chilled rosé wine for a refreshing frozen cocktail perfect for warm days.

Ingredients

  • 4 cups watermelon, cubed and chilled (seedless preferred)
  • 1 bottle (750 ml) rosé wine, chilled
  • 1/4 cup fresh mint leaves, gently bruised
  • Juice of 2 medium limes (about 3 tablespoons)
  • 1/4 cup simple syrup (optional, adjust based on watermelon sweetness)
  • 2 cups ice cubes
  • Splash of club soda (optional, for fizz)

Instructions

  1. Cube about 4 cups of chilled watermelon, removing seeds if necessary.
  2. Add watermelon cubes, chilled rosé wine, fresh mint leaves, fresh lime juice, and optional simple syrup into a high-speed blender.
  3. Pulse the mixture until smooth but slightly textured, about 30 seconds to 1 minute.
  4. Add 2 cups of ice cubes and blend on high for 1-2 minutes until thick and frosty.
  5. Taste and adjust sweetness or tartness by adding more simple syrup or lime juice as needed.
  6. For thicker texture, pour into a freezer-safe container and freeze for 30 minutes, stirring every 10 minutes.
  7. Serve in chilled glasses garnished with a sprig of mint and a lime wheel.

Notes

Use ripe watermelon for best sweetness. Chill all ingredients well before blending. Pulse blender to avoid over-blending and watery texture. Adjust sweetness after blending to balance flavors. Freeze in batches for quicker blending. For non-alcoholic version, substitute rosé with sparkling water or iced tea. Mint can be replaced with basil or cilantro for different herbal notes.
