Ingredients

Scale
  • 1 pound ground beef (85% lean preferred)
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup ketchup
  • 2 tablespoons yellow mustard
  • 1/4 cup dill pickles, chopped
  • 1/2 cup cooked bacon, crumbled (about 6 slices)
  • 1/3 cup diced tomatoes (or salsa)
  • 2 green onions, thinly sliced
  • Tortilla chips, toasted baguette slices, or sturdy veggies for dipping

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish or 1.5-2 quart casserole dish.
  2. In a large skillet over medium-high heat, add ground beef. Break up the beef and cook for 3-4 minutes until it starts to brown.
  3. Add diced onion and minced garlic. Continue cooking for another 4-5 minutes, stirring occasionally, until beef is fully cooked and onions are soft. Drain excess fat if needed. Season with salt and pepper to taste.
  4. In a medium mixing bowl, combine cream cheese, shredded cheddar, shredded Monterey Jack, and sour cream. Stir until smooth and creamy.
  5. Add ketchup, mustard, and chopped pickles to the cheese mixture. Mix well.
  6. Spread half the cheese mixture in the bottom of your prepared baking dish. Top with the cooked beef mixture, spreading evenly. Dollop the remaining cheese mixture on top and gently swirl with a spatula for a marbled look.
  7. Bake uncovered for 15-18 minutes, until the dip is hot and bubbly around the edges and the cheese is golden and starting to brown in spots. For a crispier top, broil for 2-3 minutes at the end, watching closely.
  8. Remove from oven and immediately sprinkle on cooked bacon, diced tomatoes, and sliced green onions. Add extra pickles if desired.
  9. Let cool for 5 minutes before serving. Serve hot with your favorite dippers.

Notes

For a lighter version, use ground turkey or chicken and reduced-fat dairy. For a vegetarian dip, use plant-based ground meat and skip the bacon. The dip can be assembled ahead and baked just before serving. Keeps warm in a slow cooker for parties. If the dip thickens as it cools, stir in a splash of milk or cream. Customize toppings with jalapeños, extra pickles, or sesame seeds for a fun twist.
