  • 3 cups beef broth (low-sodium recommended)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 small onion, quartered
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter (or plant-based alternative for dairy-free)
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • Pinch of salt
  • French rolls or hoagie buns (soft but sturdy to soak jus)
  • Optional: provolone or Swiss cheese slices

Instructions

  1. Trim excess fat from the chuck roast but leave some marbling for flavor. Pat dry with paper towels. Season evenly with salt, pepper, garlic powder, onion powder, and thyme. Let rest for 10 minutes.
  2. Heat olive oil in a skillet over medium-high heat until shimmering. Sear the roast on each side for 3-4 minutes until a rich brown crust forms. Transfer roast to crockpot.
  3. Pour beef broth, soy sauce, Worcestershire sauce, and minced garlic into the crockpot. Add quartered onion. Cover and cook on low for 8 hours or high for 5-6 hours until meat is fork-tender.
  4. While beef cooks, melt butter and olive oil in a wide skillet over medium heat. Add sliced onions, sugar, and a pinch of salt. Stir occasionally and cook for 20-25 minutes until onions are golden brown and caramelized. Set aside.
  5. Remove roast from crockpot and shred meat with two forks into bite-sized pieces. Return shredded beef to crockpot with juices and stir to coat.
  6. Slice rolls horizontally without cutting all the way through. Pile shredded beef onto each roll, top with caramelized onions, and add cheese if desired.
  7. Serve sandwiches hot with a small bowl of warm au jus from the crockpot for dipping.
  8. If au jus is too thin, simmer it in a saucepan on the stove for 10-15 minutes to concentrate flavor and thicken slightly.

Notes

Searing the beef before slow cooking is essential for flavor depth. Caramelize onions low and slow to avoid bitterness. Toast sandwich rolls lightly before assembling to prevent sogginess. For gluten-free, use gluten-free rolls and tamari instead of soy sauce. Leftovers keep well refrigerated for 3 days or frozen for up to 3 months (beef and au jus separately).
