  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 1 can (15 oz) refried beans
  • ½ cup sour cream or Greek yogurt
  • 3 ripe avocados, mashed
  • 1 small tomato, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 small jalapeño, seeded and minced (optional)
  • Juice of 1 lime
  • Salt, to taste
  • 1 cup shredded sharp cheddar cheese
  • ½ cup diced red onion
  • ½ cup diced fresh tomatoes
  • ¼ cup sliced black olives (optional)
  • 1 cup shredded lettuce or chopped green onions

Instructions

  1. Heat olive oil over medium-high heat in a skillet. Sauté chopped onion for 2-3 minutes until translucent.
  2. Add minced garlic and cook for 30 seconds without burning.
  3. Add ground beef, break apart, and cook 6-8 minutes until browned and no longer pink.
  4. Season beef with cumin, smoked paprika, chili powder (if using), salt, and pepper. Stir well.
  5. Drain excess fat and set beef aside to cool slightly.
  6. In a small bowl, mix refried beans with sour cream or Greek yogurt until smooth. Add water or milk if too thick.
  7. In a medium bowl, mash avocados until creamy but chunky. Stir in diced tomato, cilantro, jalapeño (if using), lime juice, and salt. Adjust seasoning to taste.
  8. In a serving dish, spread bean mixture evenly on the bottom.
  9. Layer cooked beef evenly over beans.
  10. Sprinkle shredded cheddar cheese over warm beef to slightly melt.
  11. Spread fresh guacamole as the top layer.
  12. Sprinkle diced red onion, fresh tomatoes, black olives (if desired), and shredded lettuce or green onions over guacamole.
  13. Cover and chill dip for at least 15 minutes before serving, or serve immediately if short on time.
  14. Serve with sturdy tortilla chips or crisp veggies.
