  • 1 lb ground beef (80/20 for best flavor)
  • 1 medium yellow onion, finely diced
  • 1/2 green bell pepper, diced small
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 1/2 cup tomato sauce
  • 1 tbsp Worcestershire sauce
  • 2 tbsp brown sugar (light or dark)
  • 1 tbsp yellow mustard
  • 1/2 tsp smoked paprika (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pinch red pepper flakes (optional)
  • 1 package Hawaiian rolls (12 rolls)
  • 6 slices cheddar cheese or 1 cup shredded cheddar cheese
  • 2 tbsp butter, melted (for brushing rolls)
  • 1 tbsp parsley, chopped (optional for garnish)

Instructions

  1. Dice the onion and bell pepper into small pieces. Mince the garlic.
  2. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking up with a spoon, until no longer pink (about 5-7 minutes). Drain excess fat if needed.
  3. Add diced onion and bell pepper to the skillet. Cook for 3-4 minutes until softened. Stir in minced garlic and cook for another 30 seconds until fragrant.
  4. Pour in ketchup, tomato sauce, Worcestershire sauce, brown sugar, mustard, smoked paprika, salt, black pepper, and red pepper flakes. Stir well. Bring to a gentle simmer, reduce heat to low, and let it bubble for 5-8 minutes until thick and glossy. Taste and adjust seasoning as needed.
  5. Preheat oven to 350°F (175°C). Slice Hawaiian rolls in half horizontally, keeping them connected. Place the bottom half in a greased 9×13-inch baking dish.
  6. Spoon the Sloppy Joe filling evenly over the bottom half of the rolls. Layer cheddar cheese slices or shredded cheese on top of the meat. Place the top half of the rolls back on.
  7. Melt butter in a small bowl. Brush generously over the tops of the rolls. Sprinkle with chopped parsley if desired.
  8. Cover loosely with foil and bake for 10 minutes. Remove foil and bake another 5-7 minutes, until tops are golden and cheese is melty.
  9. Let sliders rest for a couple of minutes. Use a sharp knife to cut into individual sliders. Serve warm.

For best results, let the filling simmer until thick to avoid soggy rolls. Use freshly grated cheese for optimal melting. Filling can be made ahead and refrigerated.
