A vibrant, refreshing cocktail featuring fresh blood orange juice, Aperol, Prosecco, and soda water. Perfect for parties, brunches, or relaxing evenings, this easy spritz is as beautiful as it is delicious.

Ingredients

  • 23 medium blood oranges, juiced (about 4 oz / 120 ml)
  • 2 oz (60 ml) Aperol
  • 3 oz (90 ml) Prosecco, chilled
  • 1 oz (30 ml) soda water (club soda or sparkling mineral water)
  • Large ice cubes
  • Optional: 1/2 oz (15 ml) simple syrup (if oranges are tart)
  • Optional garnishes: blood orange slices, fresh mint sprigs, rosemary or thyme

Instructions

  1. Place serving glasses in the freezer for 10 minutes (optional) to chill.
  2. Fill each glass halfway with large ice cubes.
  3. Slice blood oranges in half and juice them using a citrus juicer to yield about 4 oz (120 ml). Strain if desired.
  4. If oranges are tart, add 1/2 oz (15 ml) simple syrup to the juice.
  5. Pour 2 oz (60 ml) Aperol over the ice in each glass.
  6. Add 2 oz (60 ml) freshly squeezed blood orange juice to each glass.
  7. Carefully pour 3 oz (90 ml) chilled Prosecco into each glass.
  8. Top with 1 oz (30 ml) soda water.
  9. Stir gently with a bar spoon to combine.
  10. Garnish with a slice of blood orange and a sprig of mint or rosemary.
  11. Serve immediately while cold and bubbly.

Notes

Chill all ingredients and glassware for maximum fizz. Use freshly squeezed blood orange juice for best flavor and color. Adjust sweetness with simple syrup as needed. For batch cocktails, mix juice and Aperol ahead, then add Prosecco and soda water just before serving. Large ice cubes keep the drink cold and minimize dilution.
