St. Patrick’s Leprechaun Snack Mix

A festive, sweet-and-salty snack mix featuring crispy cereal, pretzels, marshmallows, green candies, and a creamy white chocolate coating. Perfect for St. Patrick’s Day parties, potlucks, or anytime you want a colorful, crowd-pleasing treat.

Ingredients

  • 3 cups crispy rice cereal (like Rice Chex or Crispix)
  • 2 cups pretzel twists, broken up slightly
  • 1 cup mini marshmallows
  • 1 cup Honey Nut Cheerios (or plain Cheerios for nut-free)
  • 1 cup green M&M’s or chocolate candies
  • 1/2 cup mini chocolate chips
  • 2 tablespoons green sprinkles or jimmies (optional)
  • 1 tablespoon gold sprinkles or edible glitter
  • 12 ounces white chocolate chips or melting wafers
  • 2 teaspoons coconut oil or vegetable shortening

Instructions

  1. Line a large baking sheet with parchment or wax paper.
  2. In a large mixing bowl, combine crispy rice cereal, broken pretzel twists, mini marshmallows, and Honey Nut Cheerios. Toss gently to mix.
  3. Add green M&M’s, mini chocolate chips, and green sprinkles (reserve gold sprinkles for later). Toss to combine.
  4. In a microwave-safe bowl, melt white chocolate chips or wafers with coconut oil in 20-second bursts, stirring after each, until smooth (about 90 seconds total). Alternatively, melt over a double boiler, stirring constantly.
  5. Pour about two-thirds of the melted chocolate over the cereal mixture. Gently fold with a rubber spatula until most pieces are coated. Drizzle the remaining chocolate over the top and fold again.
  6. Spread the coated mix onto the prepared baking sheet. Quickly scatter gold sprinkles (and extra green sprinkles, if desired) over the top while the chocolate is still wet.
  7. Let the mix set at room temperature until the chocolate is dry to the touch (about 10 minutes), or refrigerate for 5 minutes to speed up.
  8. Once set, break the mix into clusters and transfer to a serving bowl or portion into treat bags.

Notes

For gluten-free, use certified gluten-free pretzels and cereal. For dairy-free, use dairy-free white chocolate. Mix-ins are customizable—swap cereals, candies, or add freeze-dried fruit. Work quickly with melted chocolate and let the mix cool completely before storing. Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
